A genuine, refined and light cuisine prepared by Chef Bilal Amrani that enchants the most demanding palates of the finest gourmets.


Inspired by fresh fish of the Mediterranean that enhance his “rockfish soup infused with basil and lime” or his “baked wild turbot with thyme flowers”, seasonal organic vegetables – beetroot, artichoke, asparagus – in different recipes such as “glazed with a leek stock, served with a tangy vinaigrette and sliced white summer truffle”, the best French meat – fillet of Aubrac beef, squabs and pigeons -, the finest Provence fruits – wild strawberries from Haut-Var, Menton lemons-, the Chef prepares an exceptional cuisine for its favourite hotel.

The tasty and contemporary meals are served with attentive service in a refined setting with a beautiful view on Pampelonne bay.

For lunch and dinner, in July and August, you can enjoy the fresh dishes of the “À Ciel Ouvert” restaurant on the terrace by the mirror pool : “avocado & prawn with citrus fruit, goat’s cheese from Haut-Var and Château honey”, grilled meat and fish, pasta and pizza, quality sandwiches including the “vegetarian bagel”.


In July and August, in the evening, you can enjoy an aperitif at the bar “Le Soleil d’Eau” or at the “À Ciel Ouvert” restaurant, favourite spots to relax facing the sea.
