Petrossian. The Hôtel de Paris Saint-Tropez decided to enhance the new refined menu by collaborating with the French luxury Maison Petrossian. A nice opportunity to enjoy the new and exquisitely delicate menu “Patio’nnément Caviar”.
The Chef menu also features the best Mediterranean products thanks to delicate cooking and combinations : wild John Dory fillet with Anna potato and black truffle flavoured cream ; half-cooked Mediterranean red tuna, tender baby vegetables and sat - suki dressing ; 6 hour baked lamb shank with mashed potatoes and roasted garlic. And to perfectly finish your meal : Ecuador chocolate ingot, praline crisp and pecan nuts ; light yuzu mousse, crisp biscuit and raspberry caviar.
