GASTRONOMY

THE GREAT TALENT OF ARNAUD DONCKELE The gourmet background of one of the best chef’s in the world, is doing wonders in this palatial hotel designed by Jean-Michel Wilmotte.

For the Palace Hotel Le Cheval Blanc, this season the architect has designed 8 rooms, the lobby, the bar and the Spa Guerlain before re-thinking the restaurant and the other rooms that will be delivered in spring 2019.


It is called “La Vague d’Or”, a name well earned. The restaurant  (LVMH Group), was elected the 7th best in the world by a jury of professionals, and the Chef, Arnaud Donckele, 41 years old, was designated as the 4th best chef on the planet!

This cuisine artist has broken all the records, in 2013 at the age of 35, he was the youngest in his category to obtain the famous 3 stars in the Michelin Guide, a supreme distinction that he has confirmed every year since. He arrived in 2005 and serves an exceptional cuisine inspired by the fragrances of Provence. Every day during the summer season, he works with a team of 21 including Guillaume Godin, elected best young pastry chef of the year in the 2018 Gault & Millau.

Restaurant between land and sea

Facing the sea, the Maître d’hôtel Thierry di Tullio, orchestrates his team for the refined dinner service. The decor of the restaurant is light, the sunny terrace is bordered by century old parasol pines and does justice to the superb dishes served by Arnaud... they look like works of art.

A casual lunch facing the sea, the restaurant La Terrasse proposes a cuisine of the moment that reveals the wonderful savours of fresh seasonal produce. Arnaud, who is a true craftsman of taste, sculpts every one of these treasures, that he, himself selected so as to extract the very essence and reveal the most subtle flavours: a crispy fresh salad, a perfectly grilled sea bass finely flavoured with olive oil, a few grains of salt and aromatic herbs... and a few secrets that the Maestro keeps to himself...
